Who doesn't love a no bake dessert?! Check out this recipe by Mykaela of @erbandspice who used our Yerba Mate Mint Latte with Matcha and Probiotics to give these no bake squares a delicious minty flavour!

What You’ll Need For The Base:

1 1/2 cups nuts (walnuts, pecans or almonds)

1 cup pitted dates (soak in warm water for 10 minutes to soften if needed)

3/4 cup cacao powder

1/4 cup almond flour

2 tbsp. coconut oil

1/2 tsp. vanilla
- Pinch of sea salt
What You’ll Need For The Filling:
- 2 cups raw cashews (soaked overnight in cold water or in warm water for 30mins - 1 hour)
- 1/4 cup Yerba Mate Mint Latte
- 1 can coconut milk (400 ml)
- 1/2 cup maple syrup
- 3 tbsp. coconut oil
- 1 tsp. vanilla
- Pinch of sea salt

- Prep Time: 2 minutes
- Total Time: 5 minutes
Preparation:

Preparing the cashews: Soak overnight in cool water or for 30 minutes-1 hour in warm water before making. Be sure to rinse well before mixing with other ingredients.

Line a 9-inch x 9-inch pan with parchment paper.

Using a food processor, mix together all of the ingredients for the base until a loose crumble forms. Transfer the base to the pan and pat down.

In a blender, mix together all of the filling ingredients until smooth. Pour overtop of the crust.

Cover and transfer to the freezer to set for minimum 6 hours or overnight. Let thaw for 1 hour before serving.

Top with chocolate chips or your favourite toppings
