What You’ll Need:

1 c shredded coconut

1/2 c flaked coconut

1 c oats

2 tbsp chia seeds

1/4 c pumpkin seeds

1/2 c almonds chopped in food processor

1/2 c baru seeds chopped in food processor

1/2 c raisins
-
1/2 c chopped dates
-
2 servings of vanilla protein powder

1 tbsp coconut oil melted
-
1/2 c maple syrup
-
Pinch of salt

- Prep Time: 10 minutes
- Chill Time: 30
- Bake Time: 15 minutes
Preparation:
- Preheat oven to 400F
- Combine all of your ingredients in a large bowl
- Everything should somewhat stick together. Add more coconut oil/maple syrup if it's to dry
- Spread granola evenly onto a parchment lined baking sheet and bake for 8 minutes. Use a spatula to flip/break the granola up and cook for an additional 2 minutes.
- Once cool, store in an airtight container or jar.
