Well, we’ve got the solution: Prebiotic No-Bake Truffles: Hazelnut edition. Not only is our organic yacon syrup the solution to all of your sugar fears, but it’s also an amazing prebiotic, meaning it’s beneficial to your gut health! Who knew the desert could be so healthy? These no-bake hazelnut truffles take 5-10 minutes to prep and only 20-30 minutes until they’re ready to dive into. Packed with healthy fats from the coconut oil, antioxidants and phytonutrients from the raw cacao, and prebiotics from the yacon, these no-bake truffles are hard to resist for a handful of reasons!

What you’ll need:
*regular cinnamon can be used in place of our dual extract cinnamon, however, you may want to add double the amount, as our dual extract cinnamon is more potent.

- Freeze Time: 25 minutes
- Yields: 20-30 servings
Preparation:

Whisk 1 cup melted coconut oil with 1 cup cacao powder until combined.

Add ¼ cup roasted hazelnut butter, 4 tbsp yacon, ¼ tsp vanilla extract, ⅛ tsp dual extract cinnamon and ½ tsp pink sea salt. Mix until fully combined with coconut oil cacao mixture.*

Fold in ¼ cup finely chopped cashews.

There are a few ways that you can settle your prebiotic no bake truffles:

Portion the mixture into ice cube trays. Don’t worry, because of the oil they come out easy!

Pour the entire mixture into a baking pan lined with parchment paper. This method requires you to portion the truffles after freezing.

Pour the mixture into a muffin tray lined with muffin cups (full sized, or mini, the choice is yours!)

Regardless of which method you choose, place your truffles into the freezer and chill until solid. This should only take about 20-30 minutes.

Right before you’re about to place your truffles into the freezer, garnish with your choice of toppings. We the first method mentioned above and used our dark chocolate covered hazelnuts to garnish half of our truffles, placing one piece of chocolate on each serving, for the perfect decadent topping to an already decadent treat. On the remaining truffles, we sprinkled some of our chocolate probiotic sorghum cereal on top for an added crunchy texture.

Once they’re portioned, you can place all of your truffled into one container or a freezer safe bag for keeping. Enjoy straight out of the freezer!
