Muffin Top Banana Nut Cookies

What You’ll Need:

  • 1 medium ripe banana⁠
  • 1/3 cup baru butter or nut/seed butter of choice⁠
  • 1 tbsp of our coconut oil, melted⁠
  • 3 tbsp of our coconut palm sugar⁠
  • 1 sprouted chia/flax egg (1 tbsp of chia/flax meal + 2 ½ tbsp water)⁠
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda⁠
  • 1/2 tsp baking powder⁠
  • 1/4 tsp sea salt⁠
  • 1/3 cup almond meal (ground almonds) ⁠
  • 3/4 cup almond flour⁠
  • 1 bar of chocolate, roughly chopped or about 1/2 cup chocolate chips

      • Prep Time: 10 minutes
      • Bake Time: 15-20 minutes


        1. Preheat oven to 350° F and line a baking sheet with parchment paper⁠
        2. Make your chia/flax egg by mixing chia/flax powder with water and letting it sit for a few minutes⁠
        3. In a large bowl, combine chia/flax egg with your banana and mash⁠
        4. Add the rest of your wet ingredients and stir well⁠
        5. Next, add your dry ingredients and combine⁠
        6. Once your mixture is ready, fold in your chopped chocolate⁠
        7. Using an ice cream scooper or spoon, portion (about 2 tbsp) your cookies onto your parchment lined baking sheet.⁠
        8. Bake for roughly 15 minutes or until golden brown⁠
        9. Allow your cookies to rest before moving to a cooling rack.⁠
        10. Cookies can be kept in the freezer for up to a month!⁠
