Banana Chocolate Fudge Bites

This easy, no bake recipe is perfect to have on hand in the freezer and thaw when you need them. The chocolate-covered banana “fudge” bites are vegan and gluten free as well as easy to pop into your mouth when you need them. They’re a healthy version of chocolate that means you can literally have your cake and eat it too… well instead of cake, fudge bites!

If you’re trying to boost your health profile, improve your nutrient intake and still enjoy food, fear not! Chocolate can definitely be a diet staple! Using quality chocolate to make healthy snacks not only keeps you fueled but also curbs any sweet cravings. These chocolate banana “fudge” bites fall perfectly into that category.

When trying to improve nutrition, most people begin to limit their chocolate intake. And rightly so. Commercial bought chocolate is loaded with processed sugar. However, under the right circumstances, chocolate can be part of a healthy diet.

The trick is to ensure you’re making your own chocolate using a quality ingredient: organic cacao powder.

Cacao powder is one of the least processed forms of chocolate and thus has a bit of a bitter taste. When combined with a quality sweetener though (in this case banana and pure maple syrup), cacao powder becomes a delicious, chocolate indulgence.

Because cacao powder is so minimally processed, it retains much of it’s nutrient profile. It’s high in magnesium, iron, zinc and fiber – many things we don’t get enough of in our daily diets.

So not only do you get to retain your chocolate addiction, but you also get a ton of health benefits too! Which makes this simple, no bake snack perfect to add into your diet.

These chocolate banana “fudge” bites contain only real food ingredients, are naturally sweetened and make a great pop-in-your-mouth snack.

Unlike many snacks, these bites have a great blend of complex carbohydrates and healthy fats. This means that the energy release will be stable- no crazy energy crashes after eating them!

For busy families (or because you just love chocolate!) they make a tasty snack to have on hand if you’re running out the door.

What you’ll need for the balls:

What you’ll need for the coating:

  • 1 tablespoon coconut oil
  • 2 tablespoons yacon syrup (or syrup of choice)
  • 1 generous tablespoon of cacao powder

Dairy Free - Gluten Free - Vegan - Refined Sugar Free

  • Prep Time: 15 Minutes
  • Freeze Time: 30 minutes  
  • Yields: 11 servings

 Preparation:

  1. In a powerful blender, combine the banana, cacao, coconut oil and stevia. Blend until smooth.

  2. Pour the mixture into a bowl and add in the coconut flour.

  3. Mix until just combined making sure there’s no clumps.

  4. Let sit for five minutes as the coconut flour absorbs.

  5. Line a tray with parchment paper and grease your hands with coconut oil.

  6. Using your hands portion the mixture into balls and place them on the paper. Place the balls into the freezer.

  7. While the balls are freezing, combine the topping ingredients in a small pot with cacao on top.

  8. Heat over low to medium heat until coconut oil is just melted. Whisk together until smooth.

  9. Remove the bites from the freezer and one or two at a time dip into the chocolate sauce, coat and place back on the parchment paper.

  10. Once finished, place the balls back into the freezer for thirty minutes.

  11. When you’re ready to eat them, let thaw at room temperature for twenty to thirty minutes and pop in your mouth! Can be stored in the fridge or freezer.
